"Peppermint Fred" - the fundraising horse for cancer.
 
Peppermint Fred gets his name from Gillian Rolton's beloved dual Olympic gold medal horse, Peppermint Grove, whose stable-name was Fred. During Gill's two year battle with endometrial cancer, she set up a new partnership between the Australian International 3 Day Event (now Adelaide Equestrian Festival) and Cancer Council SA.
 
Gill was keen to leave behind a legacy to support cancer research, raise awareness and provide support to those who are suffering from cancer. All profits raised from the sale of Peppermint Fred go directly to the Cancer Council SA.
